
Professor Emeritα Maria Z. Tsimidou (tsimidou@chem.auth.gr ) holds a degree in Chemistry (Aristotle University of Thessaloniki – AUTH, 1977) and earned her PhD in olive oil research (University of Reading, 1985) as a scholar of the Greek State.
She worked for 11 years at the General Chemical State Laboratory (Ioannina, Thessaloniki), and from 1989 to 2021, she served at the Laboratory of Food Chemistry and Technology within the Department of Chemistry at AUTH as Lecturer, Assistant Professor, Associate Professor, and Professor.
Her research and writing activities on the Chemistry, Technology, and Quality Control of virgin olive oil and table olives are reflected in a series of original papers, book chapters, review articles, encyclopedia entries, conference presentations, as well as articles and speeches for the general public from 1982 to the present. She has served as an academic editor for various scientific journals and special volumes.
Her research has received financial support primarily from European and Greek research programs. She has held various administrative positions and participated in forα in the field of fats and oils, specifically in olive oil and table olives. She is a member of several expert committees and a reviewer for scientific programs and academic developments in Greece and abroad. Since 2015, she has been coordinating the Greek node of the European research infrastructure METROFOOD.
Her work has a significant impact on the international scientific community (Scopus h-index: 58, >200 articles, >9500 citations).
