be held in collaboration with the International Olive Oil Network IOON and the Organoleptic Laboratory of Crete ASR.
This will not be a typical tasting, but an engaging, elevated and educational experience –
designed to celebrate the island’s producers and highlight Lesvos as a destination of olive oil excellence.

The Science of Taste Meets the Terroir of Lesvos
Participants will have the opportunity to experience a curated sensory training
session that will highlight the unique varieties and terroirs of Lesvos olive oils. They will
taste selected olive oils from local producers, structured around the local cultivars of Lesvos (Kolovi, Adramitiani, Ladolia, etc.)
Through a structured organoleptic analysis, IOON experts, Spyros Tsevas, Eleftheria Germanaki, Manolis Karpadakis, and Filippo Falugianni will introduce the basics of professional sensory evaluation (fruitiness, bitterness, pungency) and guide participants in recognizing distinctive flavor signatures.
High-quality dishes (food pairing) will accompany the olive oils of local producers, highlighting the creative connection of sensory education with the culinary art.
Gastronomy & Cultural Memory
Interactive Co-Creation – Words of Taste: If This Oil Were Words
The experience includes short narratives connecting each olive oil to the producers’
stories, heritage and sustainability practices. Participants will be invited to capture each olive oil in a single word, image or metaphor.
These contributions will build a collective “Poetic Wall of Lesvos” – a living artistic
artifact that reflects the emotions, memories and cultural identity evoked by the island’s olive oils.

Target Audience: The session will be conducted in Greek and is specifically designed for the local community, professionals from Lesvos, and students of vocational schools.
Certification: Upon completion of the session, a Certificate of Attendance will be issued to all participants.
